The wonders of 5-spice are well known and loved. Well, allow the Dumpling Sisters to introduce you to its even more aromatic and sophisticated cousin: 13-spice! It’s tough to get hold of in the UK other than in specialist stores (don’t worry - we take care of that for you). Here it’s used in a crispy coating for shallow fried juicy chicken thighs. They’re accompanied by udon noodles in an unctuous savoury sauce and fresh little gem lettuce in spicy chilli oil. The noodles in this dish are an auspicious symbol of long life and thus often eaten around the time of Chinese New Year.
