At this time of year you want something that's going to warm you up, but also not pack on the pounds too much before the Christmas feasting gets into full swing. Well here's the recipe to tick both boxes. Ren's risotto uses pearl barley - a traditional Polish ingredient - which is of fiber and low on cholesterol and refined carbs. The mixed mushrooms - oyster, shiitake, portobellini and chestnut - give this a wonderful savoury depth. Plus, it's 100% vegan! 


Ingredients and allergen info

What we send you: mixed mushrooms (oyster, shiitake, chestnut), fresh thyme, leek, garlic, single soya cream, vegan cheese, vegetable stock pot, coarse grain pearl barley. 

You'll need from your kitchen: salt, pepper, cooking oil.

Allergens contained: soya, barley (gluten), celery. 

Packaged in an environment where we also store and handle cereals containing gluten, crustaceans, eggs, fish, peanuts, soybeans, milk, nuts, celery, mustard, sesame, sulphur dioxide/sulphites, lupin and molluscs. Not suitable for people with severe allergies.
