Yes, Brassica Fantastica is a made-up name. Heman (aka Screen to Plate's chief veggie correspondent) is proud to present this vegan one pot wonder. It's a fantastic warmer upperer and absolutely delicious. The brassica used is cavolo nero, and it's accompanied by leeks, chestnut mushrooms and your choice of either vegan sausage or beef style strips in a rich, herby tomato sauce.
There's also a choice of carbs: either a crusty ciabatta to dip into the sauce or indulgent creamy (vegan) mashed potato with chives.
This recipe just comes in the 4 person version. But never fear if you're cooking for 2 (or 1). It's perfect for keeping the leftovers for the following day. Some think that extra day of the flavours getting to know each other better makes it even tastier!
